It’s Starting to Feel a Lot Like Spring🌷

Even though Florida doesn’t really do spring the way other places do, I still know when it shows up.

It’s not the leaves changing or the air getting crisp - because that simply does not happen here. It’s more subtle than that. It’s the few weeks where the weather is just right, where I could open the windows without immediately regretting it, and where the kitchen feels bright instead of just warm.

It never lasts very long. Florida kind of skips over spring like it has somewhere else to be. But while it’s here, I try to hold onto it a little.

Lately, that’s meant spending more time in the kitchen without rushing it.

Not baking because I need to get something done, but just because I want to. Letting things take a little longer. Not overthinking what I’m making. Just going back to the kinds of things that feel right this time of year.

Sabre has definitely noticed the change too.

He’s been spending more time by the windows, watching everything outside like it’s the most important thing happening in the world. Every once in a while he’ll wander into the kitchen, do a full lap around whatever I’m working on, and then settle somewhere nearby like he’s signed off on everything.

He doesn’t help. But the supervision is constant.

I think spring shifts the way I bake a little.

In the colder months, everything feels more structured. You lean into the same recipes, the same rhythms, the same things that feel dependable. But this time of year feels lighter. I find myself going back to simpler bakes. Things that don’t need much explanation.

A loaf of bread that just does what it’s supposed to do.
Something warm in the morning that doesn’t take much effort.
Something easy to put on the table without thinking too hard about it.

I don’t think it’s about doing more. If anything, it’s the opposite.

Spring feels like a reminder to keep things simple. To notice the small things that are already good -  the smell of something baking, the light coming through the kitchen, the quiet moments in between everything else.

That’s kind of what this whole thing has always been for me.

Not trying to make something perfect. Not trying to do everything at once. Just making good bread, sharing it, and letting that be enough.

So if things feel a little lighter lately, that’s probably why.

The windows are open (for now).
The oven’s still on.
Sabre is, of course, supervising.

And there’s something good baking.
