A lot of what I do doesn’t really show up in pictures. Most of the time, what you see is the finished product, bread out of the oven, cookies cooling, something that looks simple and ready to go. What you don’t see is everything that happens before that, which is honestly a pretty big part of it and something I’ve come to really enjoy.
Especially with gluten-free baking, the process looks a little different. I have a completely separate section of my baking cabinet just for gluten-free ingredients, and when I have those orders, they get baked first every time before anything with regular flour. It makes the start of the day feel a little more quiet and intentional, like I’m easing into everything before the kitchen turns into what it usually becomes.
There’s also a lot of small, repetitive things that end up becoming part of the rhythm. I’m washing my hands constantly, grabbing ingredients, checking the oven, and making sure everything is doing what it’s supposed to be doing. My temperature probe is basically out the entire time, just making sure everything is baked through and ready to go. None of it is exciting on its own, but together it’s what makes the whole thing work.
And then there’s the part that feels a little more like putting everything together at the end. Printing labels, making the stickers that close the bags, organizing everything so it actually looks like what it’s supposed to be when it leaves my kitchen. It’s one of those things I didn’t think much about at first, but now it’s part of the process I actually like.
Sabre is, of course, involved in all of this. Not in a helpful way, but in a very consistent way. He shows up for the prep, the baking, the packaging, and especially anything that crinkles. I’m pretty sure he thinks the stickers are for him.
Most of this isn’t the part anyone really sees, but it’s the part that makes everything else feel easy on the other side. It’s not complicated, it’s just a lot of small things done the same way over and over again until it all comes together.
